Ingredients

  • 1 cup fresh pineapple chopped

  • 1 cup avocado chopped

  • 1 cup yellow pepper chopped

  • 1/4 cup red onion diced

  • 1 Lime

  • 1/3 cup cilantro

  • 1 Jalapeno sliced (optional)

Directions

  • Chop all ingredients and mix together in a bowl. Yes, Salsa is easy.
  • Serve with chips, or as garnish for other Mardi Gras recipes in our blog.
  • Share with friends and have a Mardi Gras good time!

Sweet Potatoes

Who’s cooking up Thanksgiving dishes today!?!! I am the designated maker of sweet potatoes. It’s a great dish to taste test. I’m making it without eggs this year. I’m using puréed sweet potatoes and vegan butter to create the creamy texture. Diced sweet potatoes are partially cooking in the oven now. I can’t wait to eat this tomorrow with family. Do you make sweet potatoes for Thanksgiving?

Basil Abundance

Basil Abundance is SUMMER. Pesto making was in order. I decided to try making a “chunky pesto” with the basil growing on my home back porch this morning for breakfast. I used some Vegan Parmesan and spread it thick on flatbread. Since it was breakfast I drizzled honey to polarize the spicy garlic and I ate grapes for a sweet pop. Oh Sunday morning you are delicious!!

Blueberry Apple Oats

I’m staying snuggled in this cold grey morning. Blueberry apple oats. This is soo easy and takes little time. I start with a small sauce pan on the stove… pour in a cup of frozen wild blueberries and start it simmerin’ while chopping the apple. Toss apple in and stir for a bit while just appreciating life, your body, and this moment. Deep breaths here. ♥️♥️ When everything is piping hot, add about a third cup of dried oats and a splash of water. Simmer another minute or two. I like to drizzle a little local honey on top. One of my favorite things about cooking is the moments of standing at the stove stirring and being fully in the present moment.

Quinoa & Asparagus

In the winter, my go-to warm dinner when I don’t want to spend much time cooking is rice or quinoa with veggies. I sautéd the chopped asparagus with garlic while the rice was cooking. Chopped fresh cilantro was stirred in with generous salt and pepper. It’s amazing how something so very simple can taste so good.
